Let me give you some simple tips to make a simple upma dish more exciting.
Ingredients:
Roasted sooji or Semolina flour- 1 cup (Serves 2)
Onions- 1 small (finely chopped)
Carrot- 1 (Cut into small cubes)
Sweet corn- a handful
Green chillies- 1 or 2
Green peas- a handful
Ginger- a small piece finely chopped
Curry leaves- whole or finely chopped. (I prefer them whole)
Cashew nuts- 6 nos
Raisins or kismis- optional
Water- 2 & a half cups
Sunflower oil or Coconut oil- 4-5 tsp
Salt- to taste
Steps:
1. Heat the sunflower oil/coconut oil in a pan (non-stick or normal). Once the oil is hot, add the ginger, onions, carrot, sweet corn, green peas, cashew nuts, and curry leaves into the pan.
2. Saute them for 5-8 minutes on medium flame until the onions start turning light brown.
3. Add 2 & a half cups of water to the fried vegetables in the pan.
4. Add salt to taste and let the water boil on high flame.
5. Once the water starts boiling, add the 1 cup of sooji into the pan. Make sure you add the sooji little by little as you keep stirring the contents in the pan. Otherwise, it will form a lump which is not desirable.
6. Let the sooji cook for 4-5 minutes. Keep stirring continuously all the while.
7. Turn off the flame and upma is ready!
Upma can be served with banana or mango pickle or sugar.
